Brunch inspiration! Special savory Sunday pancakes with an amazing track from Roland Nights on @largemusic!! This disco deep house groover is the perfect track to combine with these killer pancakes. Taste the combination of pumpkin, cinnamon and bacon. It’s great!! Never thought cinnamon and bacon would work out, but I totally love this combination! 

I know pumpkin is not always available, but you can definately make this without pumpkin. Just add cinnamon to your normal pancake base. The combination bacon, avocado and goat cheese is just terrific and even more with pumpkin in it. Bye the way, make sure you check other tracks from Roland Nights ‘Elevate EP’ on Large music! Love the gruuv, I’ll put a link below. It’s more work than normal pancakes, so it’s just perfect for a relaxed sunday pancake moment. 

Ingredients (2 persons):
80 gr pumpkin
100 gr whole wheat flour
100 gr milk
100 gr goat cheese
1/2 avocado
1 egg
3 tl cinnamon

Steps ►
Preheat the oven at 200 degrees and cut the pumpkin in cubes, drizzle with oil and set in the oven for 20 minutes. Make already the sunday pancake batter, with flour, milk, egg and cinnamon. Let the batter rest for a while, this is very good for the pancakes! Get the goat cheese out of the refrigerator.

After 20 minutes, mash the pumpkin an let it cool down. Mix halve avocado with the goat cheese till a nice cream, and add some pepper and salt. Add the pumpkin to the batter and give it a quick mix. Drizzle some oil in the pan, not too much because the bacon contains lot of fat. Add 2 slices of bacon next to each other, and cover with the batter. Bake golden brown for 2-3 minutes on middle heat. 
Serve with the avocado-goat cheese cream! Say hi to you savory sunday pancake!
