pumpkin harissa wrap

Some inspiration to upgrade your dish. Harissa is one of my favorite ingredients to spice up my recipes. This Italian flatbread with egg, Italian salad and harissa is a total winner. It’s spicy and full of flavor. I added my pumpkin harrisa in my lunch, this cool wrap needs a big tune, like this one from nobody’s fools and yade. So.. harissa, and what is that? It’s an North-African chili paste just like sambal or sriracha. Originally from Tunesia. It’s lots of red chili peppers, tomatoes and other spices. I made a harissa with mashed pumpkin. The color is amazing, I’m crazy about my pumpkin harissa. You really taste the pumpkin, even it’s so hot. This recipe is a Italian flatbread with scrambled eggs, a little Italian salad and pumpkin harissa! It’s delicious. 

Ingredients wrap:
1 Italian flatbread (or tortilla)
2 eggs (scrambled)
cucumber
tomatoes
mozzarella
black olives
fresh pasley
olive oil (extra vergine)
balsamico
cocos butter (butter, olive oil)
3 teaspoons harissa

Ingredients pumpkin harissa:
10 red chili peppers (5 with seeds)
80 gr mashed pumpkin 
6 garlic cloves
1/2 lemon juice
5 spoons olive oil (extra vergine)
1 ts dried coriander 
1 ts cumin powder
1/2 ts paprika powder

Steps ►
For the pumpkin harissa you neet to cut the pumpkin, and put for 15 minutes in the oven at 200 degrees (or boil for 15 minutes). Mash it a bit with a fork. Put all the ingredients in a food processor, at last add the pumpkin. Your pumpkin harissa is ready! This recipe is perfect when your going to eat pumpkin for dinner. The most of the time you have some leftovers which you can use for this hot pumpkin harissa recipe!

For this whole dish you first need to make a little salad. Chop the cumcumber, tomatoes, mozzarella and add the olives. Season with salt and pepper. Drizzle with extra vergine olive oil and balsamico. Put some cocos butter in the pan and make some scrambled eggs. Spread the pumpkin harissa on your wrap or flatbread, add the little Italian salad with parsley. When the scrambled egg is ready you can roll up your tasty lunch.
