parmegiano di melanzana

Parmegiano di Melanzana is a delicious Italian oven dish with eggplant, tomatoes and lots of cheese! A flavorful vegetarian dish and it’s actually very easy! In about 30 minutes you have a fantastic dish on the table. Eat it with flatbread, foccacia, gnocci, spaghetti, ravioli or pasta! I’m sure thats all gonna be fantastic. Top it of with some more parmegiano, the more cheese, the better right.  

I used the recipe of Pauline Weuring (@uitpaulineskeuken) and gave it a little foodmelodies twist, see link below this post. It worked out great! I made this dish for a my best friend and we both wanted to get some bread and scoop out all of the delicious tomato sauce. We almost licked our plates clean haha.  

Ingredients (2 persons) 

1 eggplant
500 gr tomato passata

1 onion
2 garlic cloves
1 mozzarella
parmegiano
hand full fresh basilicum
2 ts arrabiata spicemix (1 ts dried oregano, 1 ts dried basilicum, 1/2 ts chili flakes)
olive oil
*200 gr gnocci/pasta/flatbread

► Steps

Preheat the oven at 200 degrees. Chop the onion and garlic do olive oil in the pan. First add all the herbs and spices (arrabiata) and then onions and garlic. Cut the eggplant in thin slices and get some olive oil on both sides. Get the grill pan on the heat. Add the tomato passata and basilicum to the pan and grill the eggplant on both sides. Then start to build your parmegiano di melanzana.  First melanzana (eggplant), tomato sauce and mozzarella (+parmegiano). Repeat this, end with tomato sauce, mozzarella and parmegiano. Parmegiano di melanzana is ready for the oven, for about 10 minutes, 200 degrees, to get cheesy and delicious. You can prepare the pasta, gnocci or grill some flatbread.

Combine it with an amazing track from Art Of Tones, remixed by Saison. It’s called ‘Gimme Some More’, which fits perfectly with this dish. You’re gonna want some more, for sure. That’s how I like it, hot deep house track with fantantastic food. Happy days!
