mint almond pesto

I’m back from Mallorca, luckily it’s also sunny in the Netherlands. Are you looking for a light fresh dish perfect for hot summer days? This should be a hit! Pasta pesto, but not the traditional one. The perfect summer dish, it’s fresh, light and so tasty! Spaghetti with mint almond pesto.

It is delicious especially with the track from @sueavenue released at @nervousrecords. Lovely deep house track with a jazzy, groovy sound. Fresh tune for a fresh dish! Spaghetti, music, sunshine and something to drink! Besides wine, my favourite drink is Gin Tonic. So a side Bombay gin with the best tonic, with lemon and mint. Happy me! So how do you make my spaghetti mint almond pesto?

Ingredients (4 persons)
300 gr spaghetti or linguine
400 gr tomatoes (or other vegetables like, asparagus, peas and garden beans)
parmegiano

Almond mint pesto
50 gr mint (only leaves)
50 gr almonds (light roasted)
1 garlic clove
1 lemon zest and pinch of juice
75 ml olive oil
1/2 teaspoon mustard (french)
pinch of sugar
salt and pepper

Steps ►
First the pesto. Add the roasted almonds, mint, garlic and lemon zest in a grinder, untill finely chopped. Then add the (dijon)mustard and suger. Drizzle the olive oil in the mixture while grinding. Season with pepper and salt. Last but not least a good squeeze of lemon juice. You can save the pesto a few days in the fridge. It’s delicious for in a salad too, add some more olive oil and you have a lovely dressing.
Back to the recipe. Put a large pan with salted water boiling. Cook the spaghetti al dente. Then mix with half of the pesto and tomatoes. Serve directly with some parmegiano. Buon Appetito!
