green risotto with spinach

You’re ging to love this green risotto! It’s comfort food on it’s best! Delicious, quite easy and healthy! This vegetarian dish is full of flavor and veggies! Why is this risotto green? Natural spinach food coloring, isn’t it beautiful! Compared with a relaxing track from Sebb Junior you’ll have an amazing dinner! 

Healthy comfort food, that is just the perfect world. Comfort food is often compared with unhealthy food, but it doesn’t have to be that way! Check the ingredients! 200 gr of ‘hidden’ spinach and more roasted veggies! You can keep it easy and only make the green risotto with some ricotta, parmegiano and lemon, or with poached eggs and more veggies! 

Ingredients 4 persons

Green risotto ingredients
900 ml vegetable broth
300 gr risotto rice
2 chopped onion
2 finely chopped garlic cloves
200 gr spinach
1 glass white wine
200 gr ricotta
100 gr Parmegiano
lemon zest

olive oil
salt & pepper

Roasted veggies
1 (red) paprika
200 gr mini tomatoes
1/2 courgette
thyme
olive oil
salt & pepper

Poached eggs
4 eggs
*about 3 minutes

Steps ►

Preheat the oven at 170 celcius degrees (for the roasted veggies). Cook some water for the 900 ml vegetable broth and cook water in a pan for poaching the eggs. Don’t poach the eggs in boiling water (poach the eggs during the risotto cooking time, they need about 3 minutes).

Fry 1/2 onion and 1 garlic clove in a pan with olive oil, add the spinach till it’s shrunk. Puree the spinach in a food processor.
Fry the rest of the garlic and onion with olive oil in a pan. Add the ricotto rice and let it get a litte heat! Pour the wine in the pan and wait until the wine is completely evaporated. Then pour some broth on the rice, wait til the broth is absorbed then add again. Don’t completely drown your risotto and stir frequently and carefully.
In the meanwhile, get your veggies in a baking tray with olive oil, thyme and salt/pepper. Put it in the oven for 14 minutes. In 4 times broth pouring and in about 20 minutes is your risotto done (and taste it off course). Add your spinach puree and stir, voila green risotto! Plating time! Get on every plate the green risotto, a scoop ricotta between te veggies, lemon zest, poached egg and parmegiano. Buon appetito!
